Categories: Apple Dessert Dumpling
Yield: 4 Servings

  Maggie Brown's Hot Apple
  Dumplings

Prepare pastry.

Cut 3/4 cup butter into 1 1/4 cups all purpose flour with a pastry blender until the grain is the size of small peas. Dissolve 1 teaspoon salt in 1/2 cup ice water. Sprinkle the water over the dough; mixing just until you can gather the dough up into a ball. Don't overmix. Chill dough while preparing apples.

Prepare the Apples

Peel and core 12 apples.(This is what the recipe says but the recipe must call for small apples because if you use medium apples you will run out of dough) Combine 1 1/2 cup granulated sugar, 1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg. Roll pastry out 1/8 inch thick on lightly floured board. Cut pastry into squares large enough to completely cover an apple. Place an apple in center of pastry square and top with 2 tablespoons of sugar mixture and l teaspoon of butter.

Wet edges of pastry with water and bring each corner up over apple. Press pastry at top to seal. Bruch with mealted butter. Place in baking pan and bake in 350 oven for 45 minutes or until pastry is grown and apple is done. Serve with following sauce.

Cinnamon Sauce:

In a small saucepan combine 1/3 cup firmly packed brown sugar, 1 tablespoon cornstarch, 1/8 teaspoon cinnamon, dash of ground cloves and dash nutmeg with 1 7/8 cups apple juice. Stir to dissolve. Bring to boil. Cook stirring, until mixture thickens and clears. Remove from heat and stir in 2 tablespoons butter. Pour over dumplings.
